NOVEMBER WHITE TRUFFLE MONTH
As an ode to Alba’s revered White Truffle season, our November feature celebrates one of the world’s most sought-after culinary treasures. Known for its intoxicating aroma and delicate, earthy depth, the Alba White Truffle is showcased through a refined, chef-driven menu that highlights its rare beauty and complexity.
Each course has been thoughtfully composed to honor the truffle’s natural elegance — from delicate Wagyu Carpaccio with Colatura Aioli and Pecorino, to house-made Tagliatelle bathed in beurre monté and fleur de sel, to a perfectly seared Seabass atop parsnip purée and pickled shimeji. The experience concludes with “The Truffle” dessert — a decadent composition of caramel mousse, hazelnut sponge, and 24-karat gold.
Each dish (except dessert) is finished table side with hand-shaven Alba White Truffles for an unforgettable sensory experience.
